Loads of Veggie Pizza with Garlicky Pinto Bean Hummus
Who says vegan pizza has to be boring??! This pizza is everything but that! Smothered with pinto bean hummus, tomato sauce and a variety of fresh veggies all on a crispy crust--dinner tonight will be easy AND delicious even for the pickiest of eaters. Call your local pizzeria and let them know their services won't be needed tonight.
Makes: 1 pizza

Ingredients
1 prepared whole-wheat pizza crust
1 cup tomato sauce
1 cup Garlicky Pinto Bean Hummus
2 tbsp canola oil
1 green bell pepper, diced
4-5 white mushrooms, sliced
1 small onion, sliced very thin
¾ cup fresh baby spinach leaves
1 small tomato, thinly sliced
Procedure
1. Preheat the oven to 450F.
2. In a skillet over medium heat, add 2 tbsp canola oil, bell pepper and mushrooms. Cook for 5-7 minutes stirring occasionally.
3. During the last 1-2 minutes, add the sliced onions. Remove from heat and set aside.
4. Set the pizza crust on a baking sheet layered with parchment paper. First layer the tomato sauce.
5. Next, add the hummus in small dollops all over the pizza so that it will be easier to spread. Spread the hummus evenly. Add the spinach on top.
6. Spread the sautéed vegetables over the hummus/spinach and then add the tomato slices over the top.
7. Bake in the oven at 450F for 15-20 minutes or according to package instructions.
