Sticky Orange & Thyme Sweet Potato Cubes

This is a different take on traditional baked sweet potatoes. With a slight hint of mint from the thyme and an infusion of freshness from the orange zest, this sweet and sticky treat is bound to be a side dish that takes the dinner table show!

Makes about 2 cups of cubes
Approximate prep time: 50-60 minutes

Ingredients
2 tbsp canola oil
1 large sweet potato, cubed (about 2 cups of cubes)
¼ cup + 2 tbsp agave nectar or maple syrup
½ tsp thyme
½ tsp orange zest
salt & white pepper to taste

Note: This is a great and easy recipe to double or triple for dinner parties! Your oven does most of the heavy lifting in this recipe leaving you to sit back and relax.


Procedure
1. Preheat the oven to 400F.

2. Cut the sweet potato into medium size cubes (1½ in.) and place in a large bowl.

3. Pour the canola oil and ¼ cup agave nectar over the cubes and toss to coat  (hands work best for this job!).

4. Add the thyme and mix so it covers the potatoes evenly.

5. Transfer the cubes to a cookie tray or a wide baking dish and spread evenly apart.

6. Bake at 400F for 40-45 minutes (turning them over half way through) or until cubes are tender and have a sticky crust on the outside. You know when they are done cooking by sticking a toothpick in the center and pulling it out easily.

7. Transfer the cubes to a bowl. Drizzle remaining agave nectar over the top, add the orange zest, salt and white pepper to taste. Toss to combine and serve hot.
